Today I am excited to share with you a simple and delicious dinner idea that will make those busy weeknights go so much easier! We’ve got a household of picky eaters and one of my go to meal ingredients is chicken because everyone will eat it. I get sick of serving the same old thing so sometimes I like to change it up hence the creation of this Kettle Chip Crusted Chicken. What better way to add flavor and crunch to your chicken then by using your favorite snacks to enhance it? Elevate your dinner to the next level with this easy dinner idea for Kettle Chip Crusted Chicken! You’ll start by preheating your oven and getting everything ready to bread your chicken. I like to use a baking sheet and greased cooling rack to keep the chicken crispy while baking. Crush the kettle chips in a baggie to the desired texture (we prefer to leave a few bigger pieces for some texture and added crunch) and add in panko crumbs. You’ll also have a bowl with the beaten eggs as well as a plate of flour. Bread your chicken tenders by placing them first in the flour, then the egg wash, then finish off with the chip crumb coating. Place on baking sheet. You’ll bake them until cooked through and juices run clear (depending on your oven and size of chicken tenders this could range from 15-25 minutes.) Use a meat thermometer to make sure your chicken is cooked thoroughly. Enjoy! We whipped up some honey mustard and fry sauce to use as dips. Ingredients
- 5 oz bag Deep River Snacks Kettle Chips (use favorite flavor)
- 1/2 c panko crumbs
- 2 beaten eggs
- 1-1 1/2 c flour
- 12 trimmed chicken tenders
Instructions
- Step 1: Preheat oven to 400° F. Line baking sheet with parchment or use a greased cooling rack on the baking sheet.
- Step 2: Crush potato chips in a baggie to the desired texture (we prefer to leave some texture for good crunch). Our favorites for the breaded chicken so far are the Mesquite BBQ and the Sweet Maui Onion.
- Step 3: Set up your breading station with one plate of flour, 2 beaten eggs in bowl, and one plate of chip crumbs mixed with panko.
- Step 4: Bread your chicken tenders by placing them first in the flour, then the egg wash, then finish off with the chip crumb coating. Place on baking sheet.
- Step 5: Bake until cooked through and juices run clear (depending on your oven and size of chicken tenders this could range from 15-25 minutes.) Use a meat thermometer to make sure your chicken is cooked thoroughly.
